Tequila-Citrus Chicken Taco Bowl

When you live somewhere most of your life, you often become complacent about the joys it has to offer. Only until you move, do you realize that not every where has decent Mexican food. I realize this generalization took a sharp turn, and not all of you reading grew up in the Southwest United States, but it is true. Often we get so used to the food and restaurants easily available to us, that we are left wanting when venturing to a new city. Don’t get me wrong, I love living on the West Coast (best coast) in Vancouver, with its abundance of delicious seafood. However, I often earn for those spicy smoky flavours that I never really knew I would crave.

I have tried a few of the local hot spots in Vancouver, including Las Margaritas, Tacofino, and Lucky Taco to name a few. Each offer their own take on signature Mexican classics and street food fare. Yet after finishing my meal, I yearn for Arizona even more. To be sitting outside by the pool with the sun rays warming my skin, complete blue sky, sangria in hand and not a care in the world.

Unfortunately Vancouver and sun are not the closest of friends. Thus I don’t limit my taco eating to only Tuesdays, honestly every day should be taco day. Because my student loans don’t quite budget for dining out on the daily, I quell my cravings at home. Great Mexican food takes time as it is about taking simple ingredients and developing incredible punchy flavours, so remember to start your marinades in the morning or even the night before.

This recipe is the perfect balance of sweet, sour, and spicy. It is definitely on the edge of nutritious, but I think the Tequila definitely makes it wicked. If you don’t have Tequila on hand, I will let it go this time..I would add more honey and lime juice instead. I choose to have it in a taco bowl, as I find I can have every item of the dish in one bite.  Lastly, taco bowls are about what you like but remember the more colourful vegetables you have, the more nutrients you are eating!
