Lemon Sugar Dutch Baby with Berries

Almost every Sunday growing up, I was the queen of breakfast. My dad would be out playing tennis, my mum was running 8 miles, and my sister was snoozing away in bed. That left me, the eagerly hungry morning person that was too lazy to exercise like my parents, but not lazy enough to sleep in until 11am. Thus the only solution was to make breakfast. As a 10 year old, my chef skills had not exactly been honed in yet. So my breakfasts often entailed hauling out the Costco sized bag of pancake mix from the pantry, instead of making anything from scratch. Where the magic really happened was in the mix-ins: blueberries and chocolate chips.

Now I know what you are thinking, those mix-ins are basic. And yes, to everyone today maybe they are. But to my past self, grooving in the kitchen, I thought I was a genius. I always tried to take it one step further. My dad would make us Minnie Mouse shaped pancakes (and they wondered why we were always dying to go to Disneyland). I dabbled in the art of creative pancake design, but mine always ended up looking like Minnie’s third cousin twice removed.

Regardless, my favourite feeling was when everyone would make their way to the kitchen table. S would be half asleep, my parents slightly very sweaty, and me with my stomach growling in wait for my family to show up. To be able to sit all together for breakfast was such a treat, it almost didn’t matter what the food was, almost.

Today I still enjoy making breakfast, but I try to take it up a notch. This recipe is super simple and actually a lot easier than flipping a bunch of pancakes one or two at a time. Dutch babies, interesting name I know, are the perfect combination of crepes and light airy popovers. When brought out of the oven, it looks pretty impressive to your guests; and only you will know how quick it was to make.

Remember- breakfast is the most important meal of the day, why not share that with your loved ones!

  • When I saw the title “Dutch Baby” I thought it was about that little orphan girl from Rotterdam. I always enjoyed your breakfasts and this one looks delicious.
