RED ONION JAM

Ingredients
  • 5 small red onions
  • 1 1/2 tbsp olive oil
  • 3 sprigs (tsp) of fresh thyme
  • 2/3 cup brown sugar
  • 3/4 cup red wine
  • 1/4 cup balsamic vinegar
Directions
  • Step 1 Slice red onions thinly and place in a large pot- add oil and cook over medium heat until onions become translucent.
  • Step 2 Add sugar, thyme, balsamic vinegar, and wine. Simmer for about an hour, stirring occasionally.
  • Step 3 Cool and refrigerate until needed.
