Chicken Satay Flatbread

Another mash up you say? I say yes.

I remember the days of my childhood excited for a birthday pizza party, heading to Peter Piper Pizza, or just those boxes of pizza’s in the freezer leftover from swim team end of year parties. Okay maybe not everyone can relate to the last one-but for most we grew up with pizza. And everyone has their favourites- pepperoni, Hawaiian, cheese. The classics.

And like you I was happy in my pizza classics. It was a safe space, I knew what I was expecting every time. And then one day my pizza world got flipped upside down in Colonial Williamsburg, Virginia of all places. Now stay with me here. I know it sounds a bit bizarre, but it’s true.

After a long day of exploring through time and filling our brains with history- our family was ready for some food (read: I was getting hangry and we needed to eat stat). I remember my parents taking us to a pizza place, which was quite the treat, as when we travelled we tried to cook as many meals as we could and didn’t eat out too often. So there we were in a pizza place in Virginia. Yes we could have ordered cheese or pepperoni, but there was one item on the menu that we were drawn to and it was anything but ordinary. While I can’t remember every detail, I do remember that it was peanut satay Thai inspired and probably the best non traditional pizza my limited years had every tasted.

Over 15 years later and I still think about that pizza. If Colonial Williamsburg can mix things up, so can you.

This recipe calls for pulled chicken in an Instant Pot or pressure cooker. However, feel free to just boil your chicken in a pot on the stove or buy a ready made rotisserie chicken from the store.  Like any flatbread or pizza, these can be totally customizable (I am adding that word to my personal dictionary). So add more hot sauce, don’t add the cilantro, throw in some ripe mango. That is the best part of making food like this- invite your friends or family over, prep all the ingredients and let your guests make what they want. Take them on a journey to Virginia/Thailand that they soon won’t forget.

Chicken Satay Flatbread

Ingredients
  • For the chicken:
  • 1 chicken breast
  • 1/2 cup light coconut milk
  • 1 tsp powdered ginger
  • 1 tsp granulated garlic
  • salt
  • For peanut satay base:
  • 1/4 cup coconut milk
  • 1.5 tbsp peanut butter
  • 1 clove garlic, crushed
  • 1 inch nub ginger, crushed
  • 1 tbsp plus 1 tsp soy sauce
  • 1 tsp lime juice
  • 1 tsp rice vinegar
  • 1 tsp brown sugar
  • salt
  • For Flatbreads:
  • 2 ready made flatbread or pizza shell
  • 1 medium red pepper, thinly sliced
  • hot sauce (i use Franks)
  • 2 green onions, sliced
  • 1 small handful cilantro, roughly chopped
  • 1 cup shredded mozzarella
Directions
  • Step 1 Preheat oven to 420F.
  • Step 2 Place all chicken ingredients in instant pot or pressure cooker. Pressure cook for about 12 minutes and use the quick release button when done. Remove chicken from the coconut milk and shred. (Feel free to use rotisserie chicken to make this recipe even easier)
  • Step 3 Saute red pepper on stove with a few dashes of hot sauce.
  • Step 4 In a small bowl mix all peanut satay ingredients.
  • Step 5 Spread enough sauce over flatbreads to generously coat and top with red pepper, chicken, half of green onion and mozzarella.
  • Step 6 Bake in oven for about 10 minutes, I like to finish mine on broil to get the cheese nice and brown.
  • Step 7 Once out of the oven top with cilantro, rest of the green onion and drizzle over some of the leftover peanut sauce or place in a small bowl for dunking.

  • Looks great. Don’t you remember eating out at Sonny’s BBQ at least once every trip? I’m looking forward to a posting from you that brings us back to that smoky red-neck memory lane.
